Cook kale. Drain liquid from kale to use in cooking pasta. Mix kale and tomato pasta sauce. Use leftover liquid and pasta for minestrone.
A few years ago when I first went to university, I vowed to lose weight by eating in such a way that was healthy, satiating, convenient and cheap. I began a journey that was half typical university student (convenience foods and odd combinations of instant foods) and half passionate foodie (finding random boutique groceries). Bacon wrapped chicken skewers
This is a collaborative meal between myself and my dad. I made the bacon wrapped chicken by getting long pieces of bacon and wrapping them around chicken tenderloins while skewering them to secure the chicken and bacon. when I started running out of bacon, I chopped it up and began wrapping the chicken around the bacon. I placed the chicken skewers on top of a baking dish (if only it was a rotisserie!). Dad mashed pumpkin, sweet potato, carrots and potato. The sauce is a mixture of pasta sauce, frikasee and pad thai sauce.

Lentil gnocchi bolognese
This occurred somewhat accidentally. I needed to make bolognese for my boyfriend and I didn't have meat or normal pasta. The next best things? Gnocchi and lentils.
This dish is amazingly filling and healthy. It was also incredibly easy, as all I did was plop everything onto a baking tray and put it in the oven for about 40 minutes.
