A few years ago when I first went to university, I vowed to lose weight by eating in such a way that was healthy, satiating, convenient and cheap. I began a journey that was half typical university student (convenience foods and odd combinations of instant foods) and half passionate foodie (finding random boutique groceries). Smoked salmon salad sandwich
I don't often make sandwiches, but when I do, I make sure those two slices of carb filled material are sandwiching a worthwhile amount of food. This sandwich contains salmon, egg (microwaved on a plate), tomato, cheese and mayonnaise. Perfect for taking to school!

Kangaroo Burger
It never occurred to me until now that I could eat a normal sized burger and not be hungry afterwards. That is until I realised that kangaroo burger patties are small anyway and only need a small bun (not those large hamburger style buns where you tend to find that there is way too much bread for the meat and you have to use far more sauce for everything to be not too dry). By making the bun smaller, I had enough calories to add a side of vegetables and stay within my 400 calorie range.

BBQ coleslaw
Okay, so I was nearly out of calories for the day, but I was famished and needed something. And even though I had cabbage, I couldn't deal with having it on its own. The only solution was to cook the cabbage and drench it in low fat mayonnaise (my drench is your sprinkling. But in all honesty, you don't really need much sauce for the moistness of the cooked cabbage to carry the flavour through the whole thing). This was about 100 calories.

Okonomiyaki style omelette
Okonomiyaki, otherwise known as "Japanese omelette," or "Japanese pizza" is basically an omelette that contains flour and cabbage and has various toppings ("anything you like") as well as the kewpie style mayonnaise that is so common on top of Japanese dishes and a special "okonomiyaki style sauce," or bulldog sauce. Or XO sauce. I'm not sure what. In any case, my aim was to create my own low carb version. I made a cabbage omelette which I topped with low fat mayonnaise and a mixture of BBQ sauce, Worcestershire sauce and soy sauce. The textures are definitely different to the original, but I'm hoping the flavours are similar.
