A few years ago when I first went to university, I vowed to lose weight by eating in such a way that was healthy, satiating, convenient and cheap. I began a journey that was half typical university student (convenience foods and odd combinations of instant foods) and half passionate foodie (finding random boutique groceries). Mash and cheese
I stumbled across this hearty and delicious meal when attempting to use up the vast quantity of mashed potato I had made for a meal meant for other people (one of the most irritating things as a calorie obsessed person is that not everyone else wants to eat everything). I did this simply by sprinkling grated cheese and cracking an egg (for the protein of course) onto a bowl of mash, which I heated in the oven. The result? Slightly crusty top, hot, bubbling cheese and a soft, squishy underbelly of mashy goodness.

Cheesy grits
Since I have been using My Fitness Pal, I have come across many interesting new dishes from around the world. In particular, Grits seems to be a staple of the American Southwest. Especially if they are laden with plenty of cheese. While my grits do have a fair amount of cheese in them, I didn't use milk, so most of the creaminess here comes from the oats themselves. In true American style, I am seasoning the grits with generous amounts of ketchup.
