Kale and pb sandwich

While I was staying with my dad recently, my uncle, who is living in the US came to stay. He is vegetarian, and eats a LOT of bread. That's why this sandwich is interesting: Kale contains protein and so does peanut butter.

I used crunchy peanut butter because salads often have nuts added for "crunch" factor. There was a lot of kale in between those slices of bread, but also lots of peanut butter (spread on both slices). So despite the amount of (raw!) kale, I didn't end up tearing the bread away from the kale while eating the sandwich. In fact, the peanut butter seemed to soften the kale. To be fair though, I tore the bits of kale that didn't have any stems...

Caramel Banana

Walden Farms produces a variety of very low calorie sauces (the other notable ones being strawberry and BBQ). While, due to the nature of artificial sweeteners (they begin to taste bitter and awful in concentrated amounts), they aren't the kind of thing you'll be wanting to constantly sneak from the bottle, they make a nice low calorie alternative to dipping sauces. All this banana needs now is some peanut butter and "marshmallow creme."

Waffles and bacon

Americans love adding waffles and bacon to everything. In fact, the only things missing from here are maple syrup and peanut butter, or perhaps maple syrup flavoured peanut butter. Or maple-flavoured bacon. In any case, these are Nanna's waffles, which are the lowest carb brand of waffles available (each waffle being something like 40 calories). They are extremely easy to prepare (I either toast them or heat them in the microwave, it depends on wether I want crunchy or pancake-soft).

Abundance bowl with carrot and sultana salad

I recently learned about "abundance bowls." They are modelled on donburi, which are various types of meals that are based on a bowl of rice with toppings. Only with abundance bowls, the rice is generally "bulked out" with lentils or chickpeas, and they are topped with salads and lean meat. The salad I used here was a carrot and sultana salad with a dressing made of peanut butter and French dressing. It didn't sound very appetising, and I didn't touch it for the longest time. But next to the lentils and rice, it felt like an abundance of flavours and textures. The nuttiness of the peanut butter accentuated the nuttiness of the lentils in the rice, and the tang of the French dressing balanced out the nuttiness. The sultanas added a little sweetness. The rocket added zing. Overall, very happy.
